I’ve been getting stuck in a cooking rut lately. Meal planning turns into the same grocery list far too often in our household. I wanted to try a new side dish and I’ve never prepared butternut squash before, so I thought I’d give it a shot. Turns out, it’s ridiculously easy to add this simple cozy winter side dish to your meals. I even mixed the final result into Evelyn’s macaroni & cheese and it stayed hidden from her sight as she scooped up the cheesy noodles. Score for mom!

Easy Butternut Squash

Ingredients
- 1 butternut squash
- 2 tbsp olive oil
- 1/4 cup water
- salt & pepper
- parmesan cheese (optional)
Instructions
- Slice butternut squash in half or into quarters.
- Scoop out seeds and guts.
- Pour water onto bottom of baking dish.
- Drizzle butternut squash with olive oil and salt & pepper.
- Turn squash over to soak in water.
- Bake at 400 degrees for 40 minutes.
- Let cool for at least 10 minutes.
- Scoop into dish and mash with a fork.
- Garnish with Parmesan cheese.
