Evelyn and I got creative in our new kitchen this weekend and whipped up avocado hummus that we used as the base for our BLT flatbread recipe. It’s always fun when I can get Evie involved in cooking because she’s more apt to eat it. Now, while she wasn’t too interested in the final BLT flatbread we made, she loved the avocado hummus and scooped it up with crackers while we assembled the rest of the recipe. 

Garbanzo Bean Hummus Recipe great for kids!

Can anyone else say MOM WIN?! Seriously, she can snack on avocado hummus any day and all day. Sure beats all the sugar-filled snacks she normally begs for. 

This is a quick and easy recipe that’s perfect for the weekend. To make the avocado hummus you just need several simple ingredients. We used one can of S&W Beans Organic Garbanzo Beans. Seriously, who has time to cook beans these days? Canned all the way for this family! S&W Beans has been canning quality beans for over 120 years. They know what they are doing. You’ll also need an avocado, garlic, olive oil, a lemon, cumin, salt and pepper. 

Easy Avocado Hummus Recipe

Simple Avacado Hummus Recipe and BLT Naan

Add all of these ingredients to your blender or food processor and let ‘er spin! I added a tablespoon of water to help my blender out a bit and it turned out perfectly. For all of the exact measurements, just refer to the recipe card at the end of this blog post.

If you want, you can stop here and just enjoy the avocado hummus, but we went a few steps beyond that and whipped up BLT Flatbread using our favorite Naan bread. We threw a piece of Naan in the oven for a few minutes to get it nice and hot and spread the avocado hummus as our base. Then we topped it off with chopped tomato, arugula, and leftover bacon from our breakfast that morning. MMMmmmm!! Seriously, this recipe is SO good!

Ingredients
  1. Avocado Hummus
  2. 1 can of S&W garbanzo beans
  3. 1 large avocado
  4. 1 tablespoon garlic, minced
  5. 2 tablespoons extra virgin olive oil
  6. 1 small lemon, squeezed
  7. 1 teaspoon cumin
  8. 1 tablespoon water
  9. salt & pepper to taste
  10. BLT Flatbread
  11. 1-2 pieces Naan
  12. handful of arugula
  13. 1 vine-ripened tomato, chopped
  14. 5 pieces of bacon, cooked & chopped
Instructions
  1. Toss all of the hummus ingredients into a blender or food processor and blend until smooth.
  2. Bake Naan at 350 degrees for 5-8 minutes.
  3. Spread avocado hummus on Naan and top with arugula, chopped tomato, and bacon.
  4. Serve and enjoy!
